Scallop and Avocado Bruschetta
- 4 large scallops, cut in half (flat side)
- 1 small avocado
- 1 teaspoon each minced parsley and coriander
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
- 1 large clove of garlic
- 2 tablespoons of Grandma Walser's Red Pepper Jelly (any flavour)
- 8 slices baguette
1. Sprinkle salt and pepper on both sides of 8 pieces of scallops. Brush with olive oil.
Place on a hot grill over medium-high heat, turn when grill marks appear and brush with
Red Pepper Jelly. Remove from heat and cool.
2. Remove meat from avocado and coarsely mash; add lemon juice, salt, pepper, and coriander.
3. Grill baguette pieces on both sides. Rub each piece with cut clove of garlic. Brush with olive oil.
4. Assemble the appetizers: avacado spread on baguette; top with jelly covered scallop.



Easy Chinese Chicken Wraps
- 1 tablespoon vegetable oil
- 1 pound ground chicken, turkey or pork
- 2 tablespoons cornstarch
- 8 green onions, minced
- 1 cup water chestnuts, minced
- 1/2 teaspoon pepper
- 1 tablespoon grated fresh ginger
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- 1/2 teaspoon salt
- 2 tablespoons of Grandma Walser's 'Fiery Hot' Red Pepper Jelly
- 1 large head butter lettuce (leaves separated) or iceberg lettuce(cut in four parts, leaves separated)
1. Mix in soy sauce, sesame oil, pepper and cornstarch to ground meat. Let sit for 10 minutes.
2. Heat oil in skillet or wok. Sprinkle pan with salt, add meat and cook, stirring constantly until meat is broken in small pieces.
3. Add water chestnuts, green onions, ginger, and 'Fiery Hot' Red Pepper Jelly. Cook for 1 minute. Remove from heat.
4. To serve, spoon a heaping spoonful of meat mixture into the center of the lettuce leaf and wrap.
